Roller Coaster Life

For my first blog, I thought I would give you all a little background on ME! My name is Crystal and I was born in California, but moved to Las Vegas when I was about 11 years old. I guess I'm what is called these days, Mexican American. My dad was born and raised in Mexico and my mom was born and raised in Texas. I have 2 sisters and 2 brothers. I'll probably talk a lot about my family because I can't think of one thing that is more important.

I met my husband when we were 16 years old working as courtesy clerks at Albertson's. We dated for a while when we were 18 and 19 and that did not end well for us. We both moved on and dated other people. Around 2009, I was diagnosed with PCOS (poly-cystic ovary syndrome). I was told that along with this, the probability of ever having kids was very low. It was the most devastating news because I always wanted a family. I remember the pain I would feel when someone would ask me things like, "When are you going to have kids?" or "How many kids do you have?". Well, my husband and I found ourselves in each others lives again in 2014. After a while, even though I didn't think it was the greatest idea, we began dating again. Surprise surprise, I ended up getting pregnant! We were all so happy, I won't ever forget that feeling. My husband and I got married on July 19, 2015. Our first daughter, October was born in September of 2015. And what do you know, our second daughter, Mae, was born in December of 2015. Take that doctors! 

I'm going to be 30 this year and I am so excited for the future. Life so far has been such a roller coaster of amazing times, devastating times and everything in between. I hope this blog turns out to be one of the amazing times in my life.

Embracing My Wavy Hair

I turn 30 years in 4 months, and I am just beginning to embrace my wavy hair. How does this make sense???  Growing up in the 90's with a Mexican mom meant my hair was almost always pulled back in a tight pony tail and my scalp was brushed with one of these bad boys... Vegan Cajun Chickpeas and Sauteed Vegetables

As you can all tell thus far, I am NOT a food blogger... Not. Even. Close! But, I am a mom and cooking comes with the territory and making something that is MOSTLY healthy and my toddlers will eat is a HUGE WIN in my book. So I am going to share this creation of yummy vegetables and chickpeas (or garbanzo beans) that I put together for lunch. My husband said it was good but it wasn't his favorite (who cares what he thinks right??? ), my kiddos liked and ate it just fine, but I wouldn't mind eating this for a week! I recently began transitioning into a vegan-like diet. I am still very skeptical of calling myself vegan, because in all honesty, I am nowhere close. Did you know as a vegan, you can't have honey? Honey is an animal product! DUH! (Yea, this is some of the stuff I didn't think about when I went into this.) The point of me blabbing on and on is that this is a vegan dish, but adding some grilled chicken seasoned with Cajun spices would be sooooooo bomb! ...
